Case Scenario: You are a Nutrition Counseling at the Women, Infants, and Children’s (WIC) clinic and you are seeing Serena and her son Max today for follow-up. Serena is a 26-year-old female and her 3 year old son Max is enrolled in the WIC program. Max is being seen today for his 3-month reevaluation. At the beginning of the appointment, Serena reports that Max has been experiencing constipation for the past 3 months. She thinks Max’s constipation occurs when he isn’t eating enough fiber. She has noticed that when she cooks at home, Max’s constipation improves because she is able to incorporate more high fiber foods into the meal. However, Serena is a single mother and a full-time student and so she has limited time to cook at home. She knows that Max is happier, healthier, and more comfortable when he isn’t constipated. However, she doesn’t have the capacity to cook while going to school full time, caring for Max, and managing their home. She isn’t sure what to do and is asking for some advice from you. 4.
